its coffee is really good and its machine easy to use and clean!
but i agree that it does create a lot of waste.
nespresso should try to solve this problem.

truffles in the kitchen: pan fried kisu with leek and teriyaki sauce

   

went to ISetan supermarket and could not help it but bought some japanese produce - nicely deboned kisu fish, leek, sukiyaki pork slices and grapefruit.

this is what i did to the kisu fish:

i rinsed the fish and dried them with kitchen towel, rubbed the fish with a little salt and black pepper corn, then lightly dust them with plain or corn flour to prevent the oil from splattering when frying. After which i pan fried the kisu fish with a clove of smashed garlic and a sprig of thyme in 2 tbsp of olive oil till slightly crispy, then removed the fish and herb, set aside the excess oil for later use.  Then i cooked the leek in in the same pan till soften but not brownish.  Lastly, i removed the leek from the pan and added some (1 to 2 tsp) teriyaki sauce with the set aside oil and heat it up till slightly boiling.  You may add water and cornstarch to get a thicker consistency.
Then i poured the sweet sauce over the fish and leek. :)

the grapefruit looked so beautiful but it's so bitter!!!!  But thank goodness that Lizzie still enjoyed it!!!!

favourite read: monocle magazine sep issue 26

       

The september issue has several articles that captured my attention.

1. necklace by Ecojewel (based in Vicenza, Italy)
picture shows a necklace from its hibiscus collection, made from 3 different colours of silver: white, yellow and black, each went through a special treatment.
basically the firm purchases all the manufacturing scraps of precious silver left over from selected local factories to produce their jewellery and produce all their marketing material and packaging in italy instead of China from recylced materials so as to achieve a zero footprint for their brand from start to finish!
i find their jewellery really charming: ethical, vintage, elegant and non-ostentatious but i'm not sure about their pricing!!! ;p

2. AP moller school in Schleswig, northern Germany
this is my dream school boy!
Why wasn't my school so cool???
I'd have been such an inspired and eager student instead of one who dread going to school!!!

3. Norway re-engineering the way its citizens participate in ticking the right box by appointing a team of designer from - Blueroom Design Studio, Innovativoli Industridesign and KAdabra Productk Design - to rebrand the election system, to make voting simpler, appealing and important!

truffles in the kitchen: quick meal: fried dill and salmon

Though it is very tempting to eat out or buy outside food in singapore (as it's cheap and good), it's better to feed young toddlers home cook food to avoid typhoid fever which is a life-threatening illness caused by the bacterium Salmonella Typhi. 

I only got to know this when a friend who unfortunately contracted the disease after consuming hawker food regularly, told us about it.
Though this disease is common in developing countries where hand washing is not frequent or water is contaminated with sewage, people in developed countries can still contract this disease if they consume food prepared by carriers of the bacterium!
Though foreign workers  who enter the food industry in singapore go through health screening and  inoculation, they may still be carrier.

i don't think i'll stop eating hawker food or outside food, but i guess i just need to be more disciplined in cooking for my children and come out with more quick meal recipes!

ingredients:

1 salmon fillet, rinsed and dried
2 tbsp of full cream milk
1 or 2 sprigs of dill, rinsed and dried thoroughly
salt and pepper for seasoning
2 tbsp of corn or potato flour, enough to coat the fish
2-3 tbsp of sunflower or olive oil for shallow frying

method: 

1. Slice the salmon fillet into smaller pieces and season lightly with salt (optional) and black peppercorn
2. if you have time, soak the salmon in milk, and refrigerate till you need it.  If not, just coat the salmon with milk,
3. coat salmon pieces with flour (this will prevent the oil from splattering)
4. heat the non-stick pan with oil 
5. add the dill to make the oil fragrant
6. add the salmon pieces and fry till crispy, if the dill is turning too brown, remove from pan or place on top of fish
7. serve with teriyaki sauce

truffles in the kitchen: white mushroom and bacon cream pasta

this is inspired by the white mushroom cream pasta at Cedele as it is Lizzie's favourite!

it has become one of my favourite quick meals too and it contains no raw egg which is common in carbonara pasta. 
it took me only about 25mins maximum to prepare and cook while the children watch a short cartoon. :)

for 2 adults and 2 children

ingredients:

a knob of unsalted butter
3 cloves of garlic, smashed
4 handfuls of pasta (ribbon or penne or fusilli)
4-5 strips of streaky bacon, rinsed, dried and cut into cubes
8 white button mushrooms, rinsed, dried and sliced
2 tbsp of (Bulla) pure cream
salt and pepper to taste

method:

bring a pot of salted water to boil and cook pasta till al dente  (just cooked through but if you would like the final pasta to be al dente, cook the pasta partially only)

while the pasta is cooking, melt the butter in a non-stick pan

add the garlic and fry till fragrant but without burning the butter or browning the garlic

add bacon and fry till almost crispy

add mushrooms, salt and pepper and fry till soften

drain the pasta and add to the bacon and mushroom and simmer for one or two minutes till pasta is soft enough for young children to chew (this step makes the pasta more flavourful)

add cream and simmer for a little while till bubbling a little

serve while it is hot

My mister finished sorting out all our books yesterday and has 3 boxes worth of books to sell! We are planning to organise a book sale among friends and donate the proceeds to charity. But to which charity organisation?
